Simple Artichoke & Spinach Dip

    Ingredients

  • 1/2 cup sautéed spinach ( about 2 cups fresh)
  • 1/2 cup chopped, canned artichoke hearts, plus hand chop 1/4 cup artichoke to fold into mixture
  • 6 oz cream cheese
  • 1/4 cup sour cream
  • 1/4 cup fresh Parmesan cheese
  • 1/4 tsp dried red pepper flakes (optional)
  • 1/8 tsp salt
  • 1 to 2 fresh garlic cloves
  • 2 T olive oil
  1. Sautee spinach with olive oil
  2. Add all ingredients to a food processor.  Pulse to mix.
  3. Use a spoon to stir and fold in chopped artichoke
  4. Spoon into a baking dish and sprinkle with mozzarella and parmesan cheese
  5. Bake until golden brown on top.
